My mother, Antonia, embodies all of those attributes and more. Emigrating from her native Italy, she raised five children as a single parent, creating a new home in Canada. Imagine arriving from sunny Italy, into a snowstorm, unable to speak the language and not accustomed to the culture of our new homeland. Not only did she and my family survive, we embraced our new homeland while maintaining our Italian heritage through food, language and celebrations.
Still to this day, in my mother’s immaculate home there is always one more chair at the table. No one is turned away, all are welcome to the kitchen where she shared the food of her native Calabria. Many of these dishes she learned from my grandmother. Our home became the social center of the neighborhood. Often bursting at the seams with friends, teenagers and children; a joyous noise, laughter with the occasional disagreement sprinkled in; everyone all enjoying her hospitality and her signature dishes.
My mother was famous for her homemade pasta. She would roll the dough on a plywood sheet balanced precariously on our tiny kitchen table. A broomstick dowel for the rolling pin, she would create sheets of delicious pasta; the base for many of her signature dishes. I still remember the slap, roll of the dough hitting her pasta board.
Pesto; in a world that didn’t know, she introduced this wonderful dish to our neighbors and friends. Another specialty became the unique way she prepared seafood. Her wonderful seafood stews became a favorite. Always incorporating only seasonal fresh ingredients, my mother’s cooking was different and vital.
She even tamed the neighbors wild pitbull with her leftovers. The neighborhood kids were all terrified of that poor dog, probably frustrated from being tied to the clothesline able to only run back and forth in the small yard. Unafraid, she approached the dog with treats creating a docile pet that loved only her.
It is in this tradition that Antonia Cucina Italiana is born. We strive to create that special warm feeling we had in our home embracing the belief that there is always one more seat at the table. We look forward to sharing with you many of my mother’s signature dishes.
